As a Midwest girl, I have a deep appreciation for cured meats. Bratwurst, hot dogs, bacon, sausages....these are the staples of a good Ohio childhood diet. Now living in what most would consider the South, I don't find myself surrounded with as many people singing a Bahama Mama's praise. Fewer cookouts with Bratwurst and Sauerkraut...more cookouts with BBQ and Fried Chicken. It all goes back to heritage and cultural influence, right?
Now with kids and a better awareness of the health hazards tied with those pre-packaged meats (nitrates, smoking agents, etc..) I've steered clear of much of it in recent years. Occasionally I'd buy a pack of brats for an OSU football game celebration or hot dogs for a camping trip but there was always a bit of reluctance. Until recently.
Have you noticed the amount of healthy/ often organic sausages and hot dogs hitting grocery store shelves lately? Here in Kentucky, we're getting loads of them at not only the "healthy" grocery stores but even our local neighborhood Kroger, which is great news for this gal! Applegate is one company we're totally impressed with. No nitrates, added chemicals...and uncured. To boot, everything we've ever had from the company tastes amazing.

Corn Dog Tamale Pie
Crust (essentially homemade Jiffy Mix)
2/3 cup all-purpose flour
1/2 cup yellow cornmeal
3 tablespoons granulated sugar 1 tablespoon baking powder
1/4 teaspoon salt
2 tablespoons vegetable oil
1 egg
1/3 cup milk
1 cup frozen, fresh or canned corn
Mix all dry ingredients in a medium bowl. Add oil, egg, milk
and corn. Mix until blended. Pour into a greased 10 inch springform pan or a 9
inch pie pan. Bake on 350 degrees for 10-15 minutes until a toothpick in the
center comes out clean.
Filling
4 Applegate Farms All Natural Hot Dogs – quartered and diced
¼ cup red onion1 package taco seasoning mix
1 can of tomato puree
Meanwhile, sauté diced hot dogs and red onion on medium high heat in a skillet until a nice crispness occurs on the outside of the hot dogs. Add the tomato puree and scrape the bits off the bottom of the skillet. Sprinkle the taco seasoning into the skillet and stir. Cover with a lid and let simmer 5 minutes. Remove lid, add water if too thick but overall you want the mixture to be fairly thick and hearty.

0% Fage Yogurt (or sour cream)
Cheese (optional)
Cilantro
To assemble; Top the baked crust with the filling, spreading evenly over the top of the crust. Add toppings as desired. Remove the springform ring (if using), slice and devour!
